75g/3oz caster sugar
2x 250g/9oz tubs quark (semi-skimmed milk soft cheese)
5 tablespoons skimmed milk
1 large vanilla pod, split and seeds scraped out
3 tablespoons Kahlua (coffee liquer)
4 tablespoons strong black coffee
115g/4oz sponge fingers, snapped in half
115g/4oz mixed blueberries and raspberries
50g/2oz dark chocolate, finely grated

Beat together the caster sugar, quark, milk and vanilla seeds until smooth. Mix the Kahlua and coffee together in a large bowl. Dip half the biscuits into the coffee mixture and arrange in the base of four individual dessert glasses. Scatter with half the blueberries and raspberries and spoon over half the creamy vanilla mixture. Sprinkle over half the grated chocolate. Repeat these steps until all the remaining ingredients are used. Chill for 30 mins before serving.
